Ossau-Iraty
Ossau-Iraty (“OH-so-ear-AH-tee”) unites two neighboring provinces in southwestern France’s Pyrénées mountain range: the Ossau Valley in the Bearn and the hills of Iraty in the beech forests of the Pays Basque. This classic Manech and Basco-Bearnaise ewes’ milk cheese can be traced back more than 2,000 years and was traditionally made by the regions’ shepherds between June and September when their herds grazed in the high mountain meadows.
Today, Ossau-Iraty is made with the same traditional approach and features a luscious ivory-colored pâté with an aroma of toasted hazelnuts and a delicately smooth, slightly nutty flavor. This semi-soft cheese is surrounded by a natural, slightly tart rind that adds depth and complexity to the sweet and buttery interior. It finishes richly and smoothly, earning it the nickname "farmer's dessert".
