Appenzeller® (“A-pent-seller”) is a washed-rind mountain cheese that takes its name from its region of production:  the mountain canton of Appenzell in northeastern Switzerland. It is one of Switzerland’s most famous cheeses with a history that has been documented through tax records dating back more than 700 years.

Appenzeller® cheese is made from delightfully rich milk from cows that graze year-round on the herbal grasses in the Alps and is very similar to Gruyère in both texture and flavor. Its smooth, dense, semi-firm consistency and straw-colored interior paste is peppered with evenly distributed pea-sized holes encased by a gorgeous golden rind. Appenzeller® cheese’s flavor is delicately fruity with a wonderfully complex, well balanced finish.
