Chaumes® (“Shohm”) is a popular modern-day French cheese that was inspired by the traditional Trappist-style cheeses of years past. Its production techniques hearken to the past, but its name is playfully modern; when translated literally, “chaumes” means “stubble”.

This round cheese is perhaps best distinguished by its aromatic tangerine-orange rind that appears after several washings of the exterior, as well as brushing with some ferments. Its soft rind is edible and surrounds a pale ivory interior with a smooth, supple and somewhat springy texture. Its rich, full-bodied flavor is decidedly complex and has been described as both mellow and meaty with a pleasant hazelnut aftertaste.

Chaumes® makes a perfect table cheese and also works nicely for grilling.
