Colby cheese was invented in its namesake—Colby, Wisconsin. It is produced in the same style as Cheddar, but has a softer, semi-firm texture and a lighter, less tangy flavor. Green Bay Cheese® brand’s Colby has a warm, orange color and a gentle, welcoming flavor that melts readily into sauces and over soups and chili.
