Edam

From the 14th through the 18th centuries, Edam was, by far, the most well-liked cheese in the world largely due to its masterful ability to mature and travel effortlessly. Though the original North Holland recipe has evolved to use partly skimmed rather than whole milk, the deep buttery and nutty flavors still triumph. As Edam ages for at least 17 weeks, the sweet taste and soft feel expand into a dynamic combination that will turn cheese lovers into enthusiasts.
