Ilchester® Wensleydale is a cylindrical English cheese that is best recognized by its natural rind, moist and crumbly texture and mild but tangy-tart flavor. Good Wensleydale has a wonderfully supple texture and a taste with a hint of wild honey balanced with a fresh acidity. The flavor of Wensleydale is suited to combination with various fruits.
