Original production of the mildly bitter Saint Nectaire® cheese began in the Auverne region of central France, during the 17th century. The flavor is a wonderful combination of a summer pasture and sweet, fruity milk flavors. With mushroom and hazelnut tones, this smooth, silky textured cow’s milk cheese is in the family of semi-hard cheeses. The rustic, edible, ashy-brown rind (which classifies it as a Tomme cheese) surrounds a cream colored interior with extraordinarily rich, earthy flavors. Saint Nectaire® is a mild cheese with a slightly acidic tang to it, followed up by aromatic hints of spices and nuts.
