Organic Baby Swiss
Invented in Ohio in the mid 1960s, this straw-colored, semi-soft cheese is closely related to Swiss, but is aged for a shorter period of time giving it a much milder flavor. Organic Creamery® Organic Baby Swiss cheese’s distinctive small holes are formed during the aging process as bacteria break down lactic acid. This generates carbon dioxide bubbles—or "eyes"—that grow larger with age. Baby Swiss is made with whole milk which gives it a richer, more buttery flavor and a delightfully creamy texture.
