Germain Époisses Cheese is a traditional French soft-ripened cheese known for its unctuous presence and decadently creamy texture. Aged for at least six weeks, the rind is washed with salt water and Bourgogne brandy several times per week. This aging process leaves Époisses with a powerful, rich flavor and soft, creamy interior with a pungent smell. Its piquant, earthy and nutty taste lends itself to delicate, lighter bodied wines.
