Makes 4 Servings.
- 1-1/2 cups (6 oz.) Swiss-style cheese, grated
- 2 egg yolks
- 4 egg whites
- 2 Tbsp. butter
- 1 oz. flour
- 3/4 c. milk
- Salt and pepper, to taste
Preheat oven to 320° F.
Melt the butter in a large pan. Add the flour and cook gently for 1 to 2 minutes, stirring continuously. Gradually add the milk, stirring all the time. Remove from heat and stir in the grated Swiss-style cheese. Cool slightly and add 2 egg yolks, beating well.
In a seperate bowl, whisk the egg whites until stiff, and then fold into the mixture using a metal spoon.
Pour mixture into 4 greased ramekin bowls and bake 15 to 20 minutes or until golden brown.
