Makes 4 servings.
Ingredients:
- 1 cup mushrooms, sliced
- 1/4 cup onion, chopped
- 2 Tbsp. butter
- 1 clove garlic, minced
- 6 oz. chicken breast, cooked and cubed
- 1 tsp. Italian seasoning
- 1/4 cup white wine
- 1/4 cup Parmesan cheese, grated
- 1/2 cup Cheddar cheese or Monterey Jack cheese, shredded
- 3/4 cup light cream
- 1/4 cup water
- 3 eggs
- 1 Tbsp. Dijon mustard
Instructions:
Preheat oven to 350° F. Grease 9 inch pie pan. Sauté mushrooms and onion in butter until tender. Add garlic, then stir in chicken, Italian seasoning and white wine. Cook over medium heat until liquid evaporates.
Spread mixture in bottom of pie pan. Sprinkle with cheeses. Whisk together cream, water, eggs and mustard; pour over the chicken and cheese. Bake 40 to 45 minutes until completely set and golden brown.
