Makes 6 servings.
Ingredients:
- 1/2 loaf French bread
- Olive oil
- 2 cloves garlic
- 1 head Romaine lettuce
- 1 head red leaf lettuce
- Fresh parsley
- 1/2 cup feta cheese
- 1 tsp. olive oil
- 1 tsp. chives, chopped
- 3 Tbsp. sour cream
- 2 Tbsp. plain yogurt
- Pepper, to taste
- Vinaigrette dressing
Instructions:
Preheat oven to 375° F. Cut French bread into thin slices. In a medium sauté pan, brown both sides of the slices in olive oil and rub them with garlic. Wash the lettuce and mix in parsley. Crumble feta and add 1 teaspoon of olive oil, chives, sour cream, yogurt and a dash of pepper mix. Spread mixture over croutons and warm in the oven for 2 to 3 minutes. Place greens on 4 large plates and season with vinaigrette. Top with warm crouton slices and serve immediately.
