Makes 6 servings.
- 1 cup mayonnaise
- 2 Tbsp. prepared pesto
- 4 cups potatoes, peeled, diced, cooked
- 1/2 cup celery, chopped
- 1/2 cup green onion, sliced
- 1/2 cup red bell pepper, diced
- 1 cup Pepper Jack cheese, cubed
- 1 Tbsp. Parmesan cheese, grated
In a small bowl, combine mayonnaise and pesto. Set aside.
In a medium bowl, combine potatoes, celery, onion, pepper and Pepper Jack cheese. Add dressing and toss lightly. Sprinkle with Parmesan cheese. Serve chilled.
