Makes 4 servings.
- 4 8” flour tortillas
- 8 thin slices Canadian bacon
- Black pepper, to taste
- 1 pkg. (about 8 oz.) havarti cheese
Preheat oven to 400° F. Place tortillas on two baking sheets. Place 2 slices of Canadian bacon on each tortilla, leaving a 1/2 inch border. Add a liberal grinding of black pepper. Grate the havarti cheese on large holes of box grater. Distribute evenly over Canadian bacon leaving a 1/2 inch border. Bake for 5 minutes until cheese begins to melt, then remove from oven and place under broiler until lightly browned. Let sit 2 to 3 minutes before serving. Serve whole or cut into quarters.
