Makes 1 Serving.
- 1 Tbsp. vegetable oil
- 1 portabello mushroom
- 1 medium tomato, sliced
- 2 Tbsp. mayonnaise
- 2 slices of Swiss cheese
- 2 Tbsp. fresh sage, finely chopped
- 1 tsp. lemon juice
- 2 slices whole wheat bread, thickly sliced
Heat oil and sauté the mushroom, leave to cool.
Add the sage and lemon juice to the mayonnaise and mix well. Spread on one side of each slice of bread. Top on slice of bread mayonnaise side up with the tomato, mushroom and slices of Swiss cheese. Close sandwish with second slice of bread, mayonnaise side down.
To serve, slice in half diagonally.
