Makes 4 servings.
- 1/2 onion, minced
- 1/2 cup wild mushrooms, sliced
- 14 oz. spaghetti, cooked
- Olive oil
- Dash of white wine
- 1 cup cream
- 4 Tbsp. Prima Donna® cheese, grated
- 2 Tbsp. butter
- Fresh parsley, chopped
- Garden cress
- Salt and pepper, to taste
Sauté the onion in the olive oil until translucent, deglaze with a dash of white wine. Allow to reduce for a moment, then add the mushrooms. Cook for 5 minutes. Add the cream and allow to thicken.
Once thick, add the cheese, butter, parsley and spaghetti. Cook until the butter is melted and there is an even cooking on the spaghetti.
To serve, divide the spaghetti into four plates and ganish with garden cress and coarse shavings of Prima Donna® cheese.
