Brochette with Caramelized Leeks and Feta Cheese
Makes 8 servings.
- 1 Tbsp. butter
- 1 c. leeks, washed thoroughly and sliced 1/4-inch thick
- Salt and pepper to taste
- 2/3 c. feta cheese
- 8 slices French baguette, toasted
Heat butter in skillet over medium heat. Add leeks, salt and pepper; cook until leeks are caramelized. Remove from heat. Stir in cheese. Spoon evenly on toast slices.
Preheat broiler and broil 3 minutes or until cheese is soft and hot.
