Cheddar Corn Fritters
Makes 12 dozen.
Ingredients:
- 2 cups corn meal
- 1 cup flour
- 2 tsp. baking powder
- 2 eggs, beaten
- 2 cups milk
- 1/4 cup green onions, finely chopped
- 1 tsp. fresh herbs, chopped
- 1 Tbsp. sugar
- 1 cup (4 oz.) Cheddar cheese, crumbled
- Hot sauce, to taste
- Salt and pepper, to taste
Instructions:
In a large bowl mix all ingredients except the Cheddar. Mix until you have a pourable, but still thick batter. Fold in the crumbled Cheddar.
In a pot of pre-heated oil, or deep fryer drop spoonfuls of the batter into the hot oil. Cook for about 5 minutes or until floating. Remember to turn them half way through frying.
Serve warm.
