Cheesy Chicken Dijon Quiche

Makes 4 servings.

Ingredients:

  • 1 c. mushrooms, sliced
  • 1/4 c. onion, chopped
  • 2 Tbsp. butter
  • 1 clove garlic, minced
  • 6 oz. chicken breast, cooked and cubed
  • 1 tsp. Italian seasoning
  • 1/4 c. white wine
  • 1/4 c. Parmesan cheese, grated
  • 1/2 c. Cheddar cheese or Monterey Jack cheese, shredded
  • 3/4 c. light cream
  • 1/4 c. water
  • 3 eggs
  • 1 Tbsp. Dijon mustard

Instructions:

Preheat oven to 350° F. Grease 9-inch pie pan. Sauté mushrooms and onion in butter until tender. Add garlic, then stir in chicken, Italian seasoning and white wine. Cook over medium heat until liquid evaporates.

Spread mixture in bottom of pie pan. Sprinkle with cheeses. Whisk together cream, water, eggs and mustard; pour over the chicken and cheese. Bake 40 to 45 minutes until completely set and golden brown.
