Chicken & Swiss Sandwich with Roasted Garlic Aioli


  • 1 clove garlic, roasted
  • 3-4 Tbsp. mayonnaise
  • 1 hoagie
  • 1-2 pieces Oven Fried Chicken (click link for recipe)
  • 1.5 oz. (about 1-1/2 slices) Lorraine® cheese
  • Arugula, to taste


Prepare Oven Fried Chicken recipe according to instructions. Let cool a bit and cut into thin slices.

Preheat oven to 350° F. Place a piece of aluminum foil on a baking sheet. Take 1 clove of garlic, cut off the tip of it, and place on the foil. Drizzle with a little bit of olive oil. Wrap foil up and around the garlic clove. Bake 15-20 minutes. Remove and cool.

Squeeze roasted garlic and smash it up; mix with mayonnaise to create a garlic aioli.

Slice a hoagie in half and place cut sides down on a baking sheet. Place in a 400° F oven for about 7 minutes, until lightly toasted.

Smear a thin layer of the garlic aioli on each slice of bread. Layer chicken slices on 1 side. Layer Lorraine® cheese over the chicken. Place in the still hot (from toasting the bread) oven until the cheese has melted. Remove from oven and lay a fine layer of arugula on top of the melted cheese. Put the empty sandwich half on top of the other. Cut in half and serve!
