Cucumber & Cilantro Fresh Goat Cheese Chilled Soup

Makes 4 servings.


  • 2 large cucumbers
  • 1 lime, juice and zest
  • 1/2 c. cilantro, chopped
  • 1 c. buttermilk
  • 8 oz. French fresh goat cheese such as feta, log or spreadable, plus 2 oz. for garnish
  • Salt and freshly ground pepper


Peel cucumbers and cut in half lengthwise, scraping out seeds. Chop coarsely and place in blender with lime juice, cilantro, buttermilk and goat cheese. Blend until smooth. Add zest and season with salt and pepper.

Chill well before serving, or add ice cubes to blender if serving immediately.

Garnish with chunks or cubes of fresh chèvre log or spreadable and a sprig of cilantro.
