Cucumber & Fresh Goat Cheese "Mocki" Rolls

Makes 12-15 servings.


  • 1 English cucumber
  • 8–10 oz. French fresh goat cheese such as feta, log, crottin or spreadable
  • 2 Tbsp. chopped chives
  • Salt and freshly ground pepper
  • 1 small jar salmon eggs


With a vegetable peeler or a mandolin, thinly slice cucumber lengthwise. Mix cheese with chives, salt and pepper. Place a teaspoon of goat cheese mixture on one end of each cucumber slices. Roll cucumber around the cheese, and secure with a toothpick. Place “mocki” rolls upright on a serving plater. Top with a 1/2 teaspoon of salmon egg.
