Figs with Melted Goat Cheese
Makes 4 servings.
Ingredients:
- 1-3/4 cup Port wine
- 6 Tbsp. sugar, divided
- 1 cinnamon stick
- 8 fresh figs
- 1-1/2 cups (6 oz.) Landana® goat cheese, grated
- 1 Tbsp. butter
- 4 oz. walnuts
- 3 heads of chicory
- 1 Tbsp. olive oil
Instructions:
Preheat oven to 350˚F.
Cook the port wine with 3 Tablespoons of sugar and the cinnamon stick. Reduce to the consistency of syrup.
Cut the figs crosswise at the top, cutting in up to a little before halfway. Place the figs on a baking sheet with the grated cheese on top. Bake for about 5 minutes. Take out of the oven and let cool.
Dissolve the rest of the sugar with the butter until turns to a light golden brown. Add the walnuts and caramelize until golden brown.
To serve, remove a few chicory leaves and drizzle them with olive oil. Lay the chicory leaves on a plate and serve with figs and walnuts on top. Granish with the port syrup.
