Fluffy Omelet

Makes 2 servings.


  • 3 Tbsp. butter, divided
  • 1 Golden Delicious apple
  • 1 dash Calvados (apple brandy)
  • 1 Tbsp. almond flakes


  • 1 Tbsp. flour
  • 3 eggs
  • 1 egg yolk
  • 3-1/2 Tbsp. apple juice
  • 1/2 cup Le Gruyère® cheese, grated
  • Salt, pepper


Steam apple slices in 2 Tablespoons of butter until glazed. Then deglaze witha  dash of Calvados and put on a plate. Roast the almond flakes in remaining butter until golden brown and put aside.

To make the dough, mix together the flour, eggs, apple juice, and Le Gruyère® cheese. Beat the egg whites until stiff and add the dough. Add salt and pepper to taste.

Heat 1 Tablespoon butter in a frying pan, pour the dough and spread apple slices on one half of the omelet. Cover and cook on low until firm. Once firm, fold the moelet in half. Sprinkle with almond flakes and serve immediately.
