Fresh Mozzarella Tomato & Basil Salad

Makes 6 servings.

Ingredients:

Salad Dressing:

  • 2 Tbsp. Balsamic vinegar
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1 tsp. ground pepper

Salad:

  • 4 large, ripe tomatoes
  • 2 pkgs. (8 oz. each) il Giardino® Fresh Mozzarella cheese
  • 18 fresh basil leaves o Freshly ground pepper, to taste

Instructions:

In a small bowl, whisk together all salad dressing ingredients. Slice tomatoes into wedges. Drain il Giardino® Fresh Mozzarella cheese from brine and cut into 1/4 inch slices. Arrange tomatoes, cheese and basil leaves on individual plates; drizzle with salad dressing. Let stand 10 minutes to blend flavors. Sprinkle with fresh ground pepper.
