Gloucester Garlic Mashed Potatoes

Makes 4-6 servings.

  • 2 lb. all-purpose potatoes, peeled and cubed
  • 12 garlic cloves, peeled and cut in half
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 3 Tbsp. milk, heated
  • 6 oz. Ilchester® Gloucester cheese, sliced
  • Salt and Pepper, to taste

Place the potatoes and garlic in a large saucepan, cover with cold water, and bring to a boil. Reduce the heat to a low boil and cook until soft, about 20 minutes.

Drain the water from the potatoes, shaking off any excess water. Transfer the potatoes and garlic to an electric mixer and beat until they are well mixed. Add the butter and heated milk, mixing well.

Add the Gloucester slices, one at a time, scraping down the sides often. Mix until the cheese is well blended. Season with salt and pepper and adjust consistency (with more milk) if needed. Serve immediately.

*For an extra cheesy treat, put the Gloucester and garlic mashed potatoes in a casserole dish, cover with more Gloucester slices and broil until the cheese starts to melt and turns golden brown.
