Marinated Cod

Makes 4 servings.


  • 1 bottle of dry white wine
  • 2 cloves
  • 1 bay leaf
  • A few springs of rosemary
  • A few leaves of sage
  • 2 onions, chopped
  • 2 lb. cod (whole)
  • 2 Tbsp. butter
  • 1 lemon
  • A few springs of thyme
  • Salt and pepper, to taste
  • 1/2 cup cream
  • 1 cup (4 oz.) Landana® Gouda cheese, grated


Make a marinade from the wine, cloves, thyme, bay leaf, rosemary, sage and onion. Bring this to a boil, let simmer for 10 minutes and then cool until luke warm.

Wash the fish, lay in a pan and cover with  the lukewarm marinade. Make sure the fish is covered, if not dilute with water until fish is covered. Close the pan and leave the fish to marinate for 5 hours.

Melt the butter in a small pan, add the flour to make a cream sauce. Let this simmer gently for 10 minutes until thick and creamy. Mix the grated cheese in the sauce.

To serve, drain the fish and lay it on a serving dish. Cover it with part of the cream sauce and garnish with a lemon wedge.
