Puff Apple Pastries with Gouda

Makes 8 servings.

Ingredients:

  • 1 sheet frozen puff pastry
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 pkg. (about 8 oz.) gouda cheese, finely sliced
  • 2 cups Cortland apples, peeled and finely chopped (about 2 medium-large apples)
  • Juice and zest of 1/2 lemon

Instructions:

Preheat oven to 400° F. Thaw puff pastry sheet at room temperature for 30 minutes. In small bowl, mix sugar, flour, cinnamon and nutmeg. In another small bowl, mix apples, lemon juice and zest.

Carefully unfold pastry onto lightly-floured surface. Roll into 15 x 10 inch rectangle. Brush lightly with water.

Combine the sugar-flour and apple mixtures, tossing by hand till apples are evenly coated. With short side of pastry facing you, spoon filling on pastry and spread to within 2 inches of short sides and to the edge of the long sides. Starting at the short side, roll like a jelly roll. Cut into 8 slices (approximately 1-1/2 inch each). Place slices on a buttered baking sheet leaving a 2 inch gap between slices.

Bake 20 minutes or until golden. Remove from oven and place gouda cheese slices atop each pastry. Return to oven just until cheese melts, about 1 minute. Remove from baking sheet and cool on wire rack.
