Roasted Tomato & Fresh Goat Cheese
Makes 16 servings.
- 4 extra thin slices country bread
- 8–16 cherry tomatoes
- 8 oz. French fresh goat cheese, plain or with ash
- Olive oil
- Fleur de sel
- Chopped basil
- Balsamic vinegar
Preheat oven to 400º F.
Slice cherry tomatoes and lay in a sheet pan. Drizzle with olive oil, roast for 20–25 minutes.
