Semolina Gnocchi with Leek Ham Sauce

Makes 4 servings.



  • 1 leek, cut into rings
  • 4 oz. ham, cut into small strips
  • 1 Tbsp. butter
  • 2/3 cup vegetable stock
  • 1/2 cup heavy cream
  • salt and pepper


  • 2-1/2 cups milk
  • 2-1/2 cups water
  • Salt and pepper
  • 11 oz. semolina
  • Le Gruyère® cheese, grated


Sauté leek in warm butter, add ham. Deglaze with vegetable stock. Add cream, bring to a boil. Let simmer for about 10 minutes, then season with salt and pepper.

For the gnocchi, bring the milk, water, salt, pepper, and semolina to a boil. Let simmer for about 5 minutes while stirring constantly. Add Le Gruyère® cheese, and mix well. Form the gnocchi using two teaspoons. Add to leek cream sauce.
