Smoked Turkey Cobb Sandwich with Blue Cheese Mayo
Makes 1 sandwich.
- 2 slices sourdough bread
- 1/2 oz. mixed greens
- 2 slices tomato
- 4 oz. smoked turkey, thinly sliced
- 2 slices bacon, cooked crisp
Blue Cheese Mayo, to taste:
- 1/4 cup blue cheese
- 1/4 cup mayonnaise
- 1/8 cup avocado
- Lemon juice, 1-2 drops to taste
- Salt and pepper, to taste
To make Blue Cheese Mayo, crumble blue cheese and blend together with mayonnaise.
To make the Avocado Puree, blend together avocado and lemon juice. Season to taste with salt and pepper.
Spread one bread slice with Blue Cheese Mayo. Layer mixed greens, tomato slices, smoked turkey and bacon on bread. Spread second slice of bread with Avocado Puree and place on top.
