Sweet Summer Camembert Salad

Makes 4 servings


  • 8 cups arugula

  • 1 pkg. (8 oz.) Camembert cheese, diced

  • 2 cups red seedless grapes, halved

  • 1 cup walnuts, chopped

  • 3/4 cup strawberries, sliced

  • 1 tsp. granulated sugar

  • 2 Tbsp. balsamic vinegar

  • 1/2 cup olive oil

  • 1/8 tsp. salt

  • 1/8 tsp. ground pepper


In large bowl, toss arugula, Camembert cheese, grapes and walnuts until evenly mixed. In blender, add sliced strawberries, sugar and balsamic vinegar, blending until smooth. Slowly blend in olive oil until well incorporated. Season with salt and pepper. Drizzle half of strawberry vinaigrette over salad and toss well to coat. Serve remaining dressing alongside salad.
