Comparable to the traditional French cheese, Port Salut®, the semi-soft cow’s milk cheese Saint-Paulin brags of a golden, firm outer layer that surrounds a rich, buttery interior. With hints of walnut, this delicacy slowly melts away in your mouth, leaving behind sweet, earthy tones. The fantastic lingering qualities of the creamy, pale colored pate leave one wanting more. Considered a washed-rind cheese, Saint-Paulin is astonishingly ripened for only four to five weeks before it is ready to use giving it a fresh and pure milky flavor.
