Glacial Lakes™ Summer Seasonal Raw Milk Cheese

If ever there was a cheese to represent the luxuriant, fertile grasses of the Lake Michigan shoreline, it would be Glacial Lakes™. This delectable washed curd pressed cheese is the sister cheese to Snowfields™, Saxon® Creamery’s winter seasonal option; Glacial Lakes™ is alternately made using the herd’s full-flavored summer milk.

In Wisconsin, the season in which cheese is produced has an immense effect on its flavors, due largely to the cows’ diet. Glacial Lakes™ is made using rich, raw milk from the summer months when the dairy herd grazes on a plentiful, nutrient-dense, full-grass diet on Saxon® Homestead Farm. The result is a sweet, delicate and earthy cheese.
