Tomme de Savoie
Tomme de Savoie (“TUM day sah-VWAH”) was originally created by French Alpine farmers in the Duchy of Savoy in an effort to use the skim milk that remained from the butter making process. As a result, it’s low in fat.
This pressed cheese has a rustic appearance; its distinctively thick, gray-brown rind encases a semi-firm straw-colored interior with a wonderfully earthy aroma. Tomme de Savoie’s flavor varies slightly throughout the year depending on whether the cows are eating summer grasses or winter hay, but it’s generally mild with a slightly sweet and delightfully nutty finish that is perfect for snacking.
